Dijon Vinaigrette
The Good LFE Cookbook
Makes 1 cup
Dressing
I always make my vinaigrettes in a container with a tightly fitting lid like a mason jar so that I can just add all the ingredients together and give it a good shake. This is a very basic, versatile vinaigrette equally good on leafy greens, steamed vegetables or to marinate chicken in before roasting. Add honey if you prefer a little sweetness to your dressings.

Ingredients
- Zest of 1 lemon
- 1 1/2 tablespoon Dijon mustard
- 2 1/2 tablespoons red wine vinegar
- 1 tablespoon tarragon, chopped
- 1 tablespoon parsley, chopped
- 1/4 cup olive oil
- 1/2 shallot thinly sliced (optional)
- 1 teaspoon honey (optional)
Directions
Let shallot marinate in red vinegar for a few minutes before adding additional ingredients.
