There are so many dressed-up versions of guacamole, but little more is needed than perfectly ripe avocados smashed with a few squeezes of lime juice, some fresh cilantro, a little onion for crunch, and a touch of spice. Simplicity at its finest. It’s delicious with crispy tortilla chips, or spread on a warm corn tortilla and topped with an over-easy egg for breakfast.
Mango Salsa
This is summer in a bowl. It balances the richness of meat dishes, like pulled pork, and pairs wonderfully with a simple grilled or pan fried fish. It make a great accompaniment for our fish taco recipe, and it’s also completely acceptable to eat it out of the bowl with crispy tortilla chips or a spoon.
Fish Tacos with Creamy Lime Sauce
These can be made a couple of different ways. If the weather is right for cooking outdoors, skewer cleaned shrimp and toss them on the grill. Or, you can make this crispy baked fish and have a healthier version of the fried fish tacos that are a family favorite. With some good corn tortillas, diced tomatoes and avocado, you have a healthy, kid-friendly dinner. Also pairs beautifully with our mango salsa recipe!

What you won’t find in this recipe is Triple Sec—because it’s loaded with sugar. The juice from a sweet, tangy orange and a bit of sugar essentially eliminates the need for the liqueur. This refreshing cocktail can be paired with Mexican flavors, or just about anything else.
