
Almond Butter Bites
From The Good LFE Cookbook, as with all our recipes, the Almond Butter Bites follow the Low Fermentation Eating diet and are designed to be SIBO and IBS friendly while promoting gut health. Note: the original recipe that appeared in the first edition of the cookbook was missing a step and is listed correctly here as well as in all subsequent printings.
These simple protein-packed bites make great snacks and are a fun and easy project to do with kids.
Ingredients
- 1.5 cups almond or peanut butter
- 1 TBS honey
- 2 cups Rice Krispies
Instructions

Thoroughly mix almond butter and honey together. Fold in 1 ½ cups of Rice Krispies. Refrigerate for 30 minutes. Place remaining Rice Krispies in a small bowl. With your hands roll teaspoon scoops of almond butter mixture into balls and roll in cereal. Roll again in your hands to make sure cereal sticks to outside of balls. After balls are made place in an airtight container and refrigerate for at least 30 minutes before eating. Keep refrigerated so that they maintain their shape.
